Now trading as Montecatini Specialty Smallgoods we are proud, passionate and privileged to offer you our range of quality small goods. With 60 years of experience, the well respected Melosi family is led by Roland Melosi and his son Giovanni Melosi. Together with a dedicated team, they strive to create distinct small goods using true Italian curing methods. Roland is very passionate and enthusiastic about continuing his family’s tradition, by manufacturing a quality range of small goods.
Roland is an innovative professional with 35 years of progressive management and experience in the Smallgoods industry. He also feels extremely privileged to have been invited by the Royal Agricultural Society over the past 10 years to judge in the Smallgoods section of the Royal Easter Show. Now with the help of his son Giovanni, Roland is incorporating his expertise and knowledge to manufacture the most delicious traditional tasting small goods. Using only the highest quality Australian pork and authentic fresh ingredients and applying true traditional methods.

Because we are proud of our family name we put pride and care into preparing a beautiful product that we hope you enjoy. Out of respect for his father and tradition, Roland named the company after his father’s birthplace Montecatini, and in 2009, Roland and long time friend Len Barone became partners and Montecatini Specialty Smallgoods commenced with the intention and objective of producing new, innovative and niche products for consumers.

If your salami has a case of the sticky casing, not to worry. Nothing is rotten or has gone bad. The salami has simply been in its sealed packaging and sometimes can absorb moisture creating a tacky or sticky sensation. Sometimes there’s an ammonia smell, too, which is natural. To remove both, simply peel the salami and let it sit out on the counter for 5-10 minutes and enjoy.
Keep the salami cool in the refrigerator until ready to eat or take to a party, picnic, etc. Once opened and cut, wrap any leftover salami in a dry tea towel or a resealable plastic pouch and store in the refrigerator.
For the best taste experience, we recommend peeling. Even though we use natural casings which are edible, it’s better to serve it without the casing to get the full flavor of the salami.
