Lunch to go

How often do you remember to bring into work something for lunch? Not often? You’re not alone.

According to a survey released by the Australia Institiute, 3.8 million of us skip lunch because we are too busy to stop work. And those of us that do remember to eat? More than 70% of us eat at our desks. No wonder we forget to take our lunch to work – it seems that lunch is WAY down on the list of our priorities.

Which is a real shame because really, the energy we get from lunch is crucial to getting the most out of our day. And a good, healthy lunch is key to avoiding bad eating habits: 3pm chocolate hit, I’m looking at you.

So the key is to make lunch simple, delicious and nutritious. And if you do eat at your desk, why not make it a little bit special. Bring in a nice plate or bowl, and some decent cutlery – nobody likes to eat with a plastic fork.

You could even turn your office drawer into a store cupboard and stock it with essentials –  salt, pepper grinder, olive oil, soy sauce, some salad dressing, and maybe a small chopping board and a sharp knife. You’ll find all the essentials at a kitchenware store – click here for one near you.

While you’re there, you’ll also be able to stock up on a week’s worth of mason jars, which we reckon are perfect for packing up your lunch. Not only are they funky, but they’re functional as well.

Fill your lunch jar with your favourite salad veggies from your local green grocer, add some protein like canned tuna, egg or feta; some wholesome grains for low-GI energy, and top it off with a big bunch of fresh baby spinach. Kapow! It packs quite a punch.

But don’t just take our word for it. Here’s a handy table to help you mix and match your favourite salad ingredients:

Fresh greens Vegetables Legumes & pulses & grain Protein
Lettuce Cherry tomatoes Chickpeas Boiled eggs
Rocket Carrots Lentils Feta cheese
Parsley Sweet corn Kidney beans Goats cheese
Basil Avocado  Broad beans Shredded chicken
Spinach Capsicum Cannellini beans Canned tuna
Broccoli Red onion  Peanuts
Celery Mushrooms Quinoa
Cabbage Beetroot Brown rice
  Radishes Couscous

And the best thing? You can make these cute salad jars in advance, store them in the fridge, and take them one at time into the office. Remember to keep a bowl and fork at your desk so you can tip out the salad into the bowl, add a little cracked pepper and olive oil dressing that you stash in your drawer, and settle in for a healthy lunch.

You can expand your repertoire with soups, casseroles and even breakfast smoothies.

But don’t forget, take the time for lunch. You’re worth it.
